Garlic Shrimp

The first time we tried this recipe we were shocked at how simple it was and how delicious and flavorful the finished product was – we devoured them all! Shrimp is also affordable to buy in bulk, and is very low calorie.

Preperation time: 10 mins

Cooking time: 10 mins

Ingrediants:

–       10 large clean shrimp (if you wait to peel them until after cooking it retains the flavour better)

–       3 tablespoons of extra virgin olive oil

–       1 tablespoon of lemon juice

–       1 teaspoon red pepper flakes

–       1 pinch of salt and 1 pinch of pepper

–       2 cloves of minced garlic (click here for our tutorial on how to mince garlic)

–       Fresh parsley, chopped for garnish

Directions:

  1. In a hot (max) non-stick pan, mix olive oil, and garlic.
  2. Let it cook for until it starts to sizzle.
  3. Add the shrimps and let it cook until its pink on both side of the shrimp,
  4. Add lemon, hot pepper flakes, parsley, salt and pepper.
  5. Cook all the items for 30 seconds, and immediately remove the pan from the heat.
  6. Once cooled, peel outer layer of shrimp
  7. Arrange the shrimp unto a plate, and garnish with fresh parsley.

Garlic Bread with Bruschetta

Garlic bread is a crowd favourite that compliments any meal and is so delicious you can never just stop at one piece! Below you will find a simple and quick recipe for garlic bread, and for those who want to take the side to the next level, a basic bruschetta topping recipe to go along with it! No matter how you choose to prepare it – you will not disappoint your dinner guests! We promise!

Garlic Bread

Preparation time: 3 minutes

Cooking time: 10 minutes

Ingrediants:

–          1 white or whole wheat baguette

–          ¼ cup butter (soft)

–          1 clove of minced garlic (see our garlic mincing tutorial video here)

Directions:

–          Preheat oven to 350ºF

–          Cut baguette longwise to have two halves

–          Spread butter on pieces

–          Sprinkle garlic evenly across slices

–          Bake in oven for approx. 10 minutes or until bread is golden brown

Bruschetta topping:

Preparation time: 8 minutes

Cooking time: 2 minutes

Ingredients:

–          1-2 chopped tomatoes

–          ½ chopped onion

–          1 bunch fresh basil

–          4 tablespoons extra virgin olive oil

–          1 tablespoon of lemon juice

–          4 cloves of garlic, minced (click here for our tutorial)

–          Pinch of salt and pepper

Recipe - Thursday - Garlic Bread - Bruschetta

Directions:

  1. In a bowl, toss together the tomatoes, onions, basil, and garlic
  2. Mix in the extra virgin olive oil, lemon juice, salt, and pepper
  3. Mix all the ingrediants with a spoon and spread on toasted garlic bread
  4. Serve upon completion

Roasted Potatoes with Garlic Butter Sauce

These potatoes are the perfect side dish for any occasion – not to mention super easy to make, affordable, and mouthwatering!

Ingrediants:

–          1 tablespoon of olive oil

–          2 large potatoes

–          1 clove of garlic

–          3 tablespoons of butter

Recipe - Wednesday - Roasted Potatoes1

Directions:

Preheat oven to 400ºF. Cut the potatoes in half long-wise and place them in an olive oil-glazed casserole dish. Put the potatoes in the oven for 25-30 minutes or until the top is brown and the inside is soft and cooked thoroughly. In a small pan, melt the butter and add 1 clove of minced garlic (see our video here on how to mince garlic). Remove the potatoes from the oven and cut deep X’s accoross each potato, then pour the garlic butter mixture over the potatoes. Let dish cool then serve.

Hummus

This is a quick and easy recipe – perfect for students because it is also very affordable! What makes this hummus recipe better than most is that it replaces some of the oil with water and lemon juice, making it much healthier but just as delicious!

Ingredients:

–          1 ½ cup drained canned chick peas

–          ¼ cup water

–          1 clove garlic, minced (click here for our video on how to mince garlic)

–          3 tablespoons lemon juice

–          1 tablespoon tahini

–          1 teaspoon olive oil

–          ½ teaspoon ground-cumin

Directions:

Combine all ingredients in food processor or blender. Purée until smooth.

Recipe - Tuesday - HummusMakes approx. 1 ½ cups. Per 2 Tablespoon serving: Calories: 45, protein: 2g, carbohydrates: 6.2g, fat: 1.5g, % cal. from fat: 30
